Long awaited new arrival of Mutsumi Hinoura San's White2 Kurouchi Hammered Bunka 180mm.
This knife was made under the family's brand name Ajikataya by the 4th generation Mutsumi Hinoura San. His father is Master Tsukasa Hinoura San, well respected for his hunting knives and unique Kurouchi Damascus kitchen knives. This knife's core is made from White2 carbon steel and stainless cladding with beautiful honeycombs like hammered Kurouchi finish. Bunka has been popular among chefs now because of its generous blade height like a Nakiri and advancing forward pointy tips like a Santoku or Gyuto. The profile has about 45% flat spot and thereafter begins to gently upward curved making it ideal for rock cutter as well. Balance point is about 48mm from the handle. Thin behind the edge, smooth thick spine as well as choil and very sharp out of the box. The core White steel is easy to sharpen and hold its edge well. It is recommended to clean and wide off the moisture after use to prevent rust from forming. Pair with the burnt chestnut handle and horn ferrule making this clean Kurouchi finish hammered Bunka look stunning and joy to use.
